One of my husband’s favourite healthy snacks is creamy hummus with celery sticks. I didn’t want him to eat the over-priced store bought stuff which is often packed full of preservatives and seed oils, so I decided to learn how to make it for him myself. After trying out many recipes to try and find the best, I’ve discovered this version, which I now make all the time. It’s so EASY and delicious! I was never a fan of hummus until I made it myself and now it’s my new favourite snack too!
RECIPE:
Two cans of drained chickpeas (juice reserved)
1/4 cup of chickpea juice or more if needed
1/4 cup of olive oil
The juice of one lemon
1 large tablespoon of tahini
1 teaspoon of cumin
1/2 teaspoon of white pepper
1/2 teaspoon of salt
1 ice cube (optional, but adds extra creaminess!)
Blend until desired smoothness and enjoy with cucumber - my favourite, carrot sticks, crackers, or celery! 😊
