CRISPY Zucchini Fritters

These healthy fritters are SO CRIPSY, EASY & DELICIOUS! The perfect snack on their own or as a vegetable burger alternative 🤤

FRITTERS RECIPE:

Zucchini:
- 2 medium zucchini’s
- 1 tsp of salt


Batter:
- 1/2 cup of plain flour
- 2 green onions
- 1/4 cup of Parmesan (for that extra crunch & flavour)
- 1/2 tsp of sweet paprika (optional)
- 1/2 tsp of baking powder
- 1 large egg
- 1 garlic glove finely chopped
- Pinch of pepper

Sauce:

Equal parts sriracha sauce or any good hot sauce and full fat mayonnaise.

Method:

Grate all of your zucchini, sprinkle with salt and let sit for 10 minutes.

While zucchini is set aside, mix all of the dry ingredients together in a separate bowl. Then mix your wet ingredients into your dry and mix very well.

Your zucchini should be ready now, ring out with cheese cloth or hands to remove excess liquid before use - this is the key to the crispiest fritters, no one wants a sad soggy fritter!

Mix zucchini into your batter, and oil your pan on high heat.

Spoon mixture onto pans, fry to golden perfection & you’re done! I like to serve mine with a spicy mayo.
