My Maltese Grandma’s Famous Bean Salad!

So simple, yet so delicious. My grandma’s bean salad originates from Malta, and it’s always so refreshing as a side dish to our BBQ or main meals in the summer.

RECIPE: (to serve 4 people)

1 can of drained mixed beans

Three handfuls of green beans (because all the donna’s use handfuls for their measuring - you have to feel it 😄)

1/4 cup of olive oil

A generous splash of vinegar (to taste)

1 teaspoon of salt

1/2 teaspoon of white pepper

1 small garlic clove, minced

1 teaspoon of honey or sugar (sugar is traditional)

Chopped parsley to serve

Method:

Boil your beans in salted water for a few minutes - until you can just put a knife through them - drain and immediately toss with ice cubes. This is the secret to keeping them from overcooking while they sit and retains the beans gorgeous, vibrant green colour!
Add your drained, rinsed canned beans to your green beans. Mix together your olive oil, vinegar, sugar or honey, salt and white pepper in a separate bowl. Pour over your beans and top with parsley.

Refrigerate if you would like, and then serve and enjoy.
