Honey Roasted Figs over Yogurt
The prettiest side dish or healthy breakfast idea. These honey roasted figs are a real treat.
I had sooo many of figs growing in my garden and didn't want to waste any of them so I had to get a little creative this season. Craving something healthy and nourishing, I whipped up this super easy, but stunning plate.

Ingredients:
as many figs as you wish, halved
honey for roasting and drizzling (adjust to taste)
a cup of greek yogurt (or more to accompany extra figs)
1/4 cup of roasted chopped pecans
a sprinkle of slithered almonds (optional)
a few leaves of fresh mint, ripped
Method:
Simply cut your figs in half, spread a layer of honey over the pink flesh, and roast on a cast iron pan until they have caramelised. Then once they have cooled slightly, lay down a lovely bed of Greek yogurt, top with your figs, some roughly chopped roasted pecans and some slithered almonds, drizzle with more honey, fresh mint and enjoy!
It doesnโt get any easier than that :)
