Honey Roasted Figs over Yogurt

The prettiest side dish or healthy breakfast idea. These honey roasted figs are a real treat.

I had sooo many of figs growing in my garden and didn't want to waste any of them so I had to get a little creative this season. Craving something healthy and nourishing, I whipped up this super easy, but stunning plate.

Ingredients:

  • as many figs as you wish, halved

  • honey for roasting and drizzling (adjust to taste)

  • a cup of greek yogurt (or more to accompany extra figs)

  • 1/4 cup of roasted chopped pecans

  • a sprinkle of slithered almonds (optional)

  • a few leaves of fresh mint, ripped

Method:

Simply cut your figs in half, spread a layer of honey over the pink flesh, and roast on a cast iron pan until they have caramelised. Then once they have cooled slightly, lay down a lovely bed of Greek yogurt, top with your figs, some roughly chopped roasted pecans and some slithered almonds, drizzle with more honey, fresh mint and enjoy!

It doesnโ€™t get any easier than that :)
