Pecan Chocolate Chip Cookies
This is my original recipe developed from my love of pecans and my dad’s insatiable craving for sweet treats to nibble on throughout the day. So easy and delicious, you’ll find yourself baking these time and time again.
Tara’s Pecan Cookie Recipe
Ingredients:
180g salted butter, melted
2 cups of plain flour
2 tsp of vanilla extract
2 cups of pecans, finely chopped
1 cup of chocolate chips
1 tsp of baking powder
1 1/2 cups of brown and white sugar
2 eggs
Method:
Preheat the oven to 180 degrees Celsius or 375 degrees Fahrenheit.
In a mixing bowl, combine 180g melted salted butter, 1 1/2 cups of brown and white sugar, and mix until well combined.
Add 2 eggs and 2 tsp of vanilla extract to the mixture, and stir until smooth.
Gradually mix in 2 cups of plain flour and 1 tsp of baking powder until a dough forms.
Fold in 2 cups of finely chopped pecans and 1 cup of chocolate chips into the dough.
Scoop tablespoon-sized portions of dough onto a baking sheet, leaving space between each. Top with a pecan on each cookie.
Bake in the preheated oven for approximately 12 minutes or until golden on all sides.
Remove from the oven and let the cookies rest for 10 minutes before enjoying.
