Apple Rum Cake
This is probably my most favourite tea cake ever. So comforting and yummy, the moist texture of this cake, infused with hints of cinnamon, perfectly complements the fruity sweetness, making it a delightful treat on any occasion.

Apple Rum Cake
Apple Rum Cake Recipe
Ingredients:
4 green or red apples, peeled, cored, and diced
3/4 cup of plain flour
3/4 cup of firmly packed brown or white sugar
3/4 tsp of baking powder
A pinch of salt
115g of salted butter
3 tablespoons of golden rum (or sub for 1 tsp of rum essence, or leave it out entirely)
2 eggs, lightly whisked
1 tsp of vanilla essence
Instructions:
Preheat the oven to 180 degrees Celsius or 375 Fahrenheit.
In a mixing bowl, combine the flour, sugar, baking powder, and salt.
Add the diced apples to the dry ingredients and mix to coat the apples.
In a separate bowl, cream the butter and then gradually add the eggs, rum (or rum essence), and vanilla essence.
Slowly add the wet ingredients to the dry ingredients and mix until well combined.
Pour the batter into a greased baking pan and spread it evenly.
Bake for approximately 30-40 minutes or until the cake is golden brown and cooked through.
Allow the cake to cool slightly before removing it from the pan.
Dust the cake with icing sugar.
Serve the apple rum cake with cream or ice cream and enjoy!
