Golden Syrup Dumplings (original recipe!)
Absolutely divine, these dumplings are a classic recipe from the 80s. My mum used to make these for me as a kid, and they were always mouth watering. She taught me how to make them recently and I fell in love all over again! Super sweet and comforting, they are an ultimate crowd pleaser. They are also very budget friendly too! Serve with a dollop of cream, ice cream, or if you want to be extra decadent - both, and enjoy!
Sweet Golden Syrup Dumplings Recipe
Serving: 4 servings (Consider doubling the recipe for leftovers)
Ingredients:
For the sauce:
1 1/3 cups water (330ml)
1/2 cup sugar
2 tablespoons golden syrup
2 teaspoons lemon juice
30g salted butter
For the dumplings:
1 cup self-raising flour
30g butter
1 egg
1 - 1/2 tbsp milk
Instructions:
In a wide shallow saucepan over low heat, combine water, sugar, golden syrup, lemon juice, and butter.
Stir occasionally until the butter and sugar is dissolved.
For the dumplings:
Sift the flour into a mixing bowl. Rub in the butter. Make a well in the center and add the egg and milk.
Gently mix until just combined (avoid over mixing, this keeps them fluffy and light, not dense).
Form the mixture into small balls using floured hands or drop spoonfuls into the boiling syrup.
Immediately cover the pan with a lid to allow for steaming (important for fluffy dumplings).
Reduce heat and simmer for about 6 minutes, or until the dumplings are cooked and well risen.
Be cautious not to overcook to prevent toughness.
Serve hot with cream or vanilla ice cream.
