Roasted Carrot Dip

This spiced roasted carrot dip is completely vegan, and has the most silky smooth, velvet texture, and is so delicious! Iβm not typically a fan of roasted carrots, so I was really surprised by how yummy this EASY DIP tasted! π€€ Itβs the perfect healthy snack, or Christmas appetiser.
Recipe:
4 carrots, peeled and sliced into chunks for roasting
A few tablespoons of oil for roasting
3/4 - 1 tsp of salt (adjust to your taste)
3/4 tsp of cumin powder
1/2 tsp of chilli powder
1/2 tsp of smoked paprika
1 can of chickpeas, drained, juice reserved
1/4-1/2 cup of reserved chickpea juice (aquafaba)
1 - 2 tablespoons of olive oil
The juice of half a lemon
1 garlic clive, minced
Method:
Peel and dice your carrots into smallish pieces. Cover with oil and coat with salt and spices.
Roast at 180degrees celsius or 375farenheit for approx 30 min, or until soft all the way through for easy blending.
Add to a blender with your chickpeas, aquafaba juice, olive oil, garlic, lemon juice and blend until smooth and creamy! Add more chickpea juice or oil if needed for desired consistency.
Serve with a drizzle of oil, some greens, (I used fresh thyme), hazelnuts (optional), and a sprinkle of sweet paprika.
Serve with your fav crackers, bread, or veggie sticks and enjoy! π
