Vegan Roasted Capsicum Dip

This vegan roasted capsicum cashew dip is so creamy and delicious! It’s packed full of so much veggie goodness and fibre for your gut health! It’s so EASY to make and it’s the perfect healthy snack or appetiser to bring to a party or BBQ. πŸŒ±πŸ…

- 1 red capsicum (drizzled with oil, salt & pepper, then roasted in half, without the seeds)
- 3 cloves of garlic (whole roasted)
- 1 1/2 cups of cashews (soak them in boiling water for 15 min before straining)
- 1 large fresh tomato
- the juice of one lemon
- 1 teaspoon of salt
- 1/2 teaspoon of white pepper
- 1 teaspoon of coriander ground, or cumin
- a generous drizzle of olive oil
- love! πŸ’ž

Blend all of your ingredients together until smooth and creamy. Drizzle with more olive oil if you wish, and top with greens. Enjoy with cucumber sticks, carrot, or your favourite crackers 😊
