Mediterranean Baked Chicken (One Pan Wonder)

This baked mediterranean chicken dish is one of the easiest recipes you will ever make, and one of the tastiest too! It’s a ONE PAN WONDER! It comes together all in one dish, and you don’t even have to worry about pre-frying the chicken. It’s my sweet hubby’s favourite meal, and if you try it yourself, you’ll see why. Succulent chicken pieces with juicy and sweet roasted tomatoes is an absolute, match made in heaven.
Marinade / Sauce Ingredients:
2 jointed chickens, keeping the skin on
Juice of one lemon
6 cloves garlic, minced
2 tsp Dijon mustard
2 tbsp honey or 1 tbsp sugar
1 tbsp dried oregano
1.5 tsp paprika
1 tbsp olive oil
1/2 tsp each salt and pepper
In a bowl, combine the lemon juice, minced garlic, Dijon mustard, honey (or sugar), dried oregano, paprika, olive oil, salt, and pepper to create the marinade.
Add the jointed chickens to the bowl with the marinade and toss to coat evenly. If time permits, let the chicken marinate for 24 hours in the refrigerator. Otherwise, you can proceed with the next steps.
BAKE
1-2 red or brown onions, quartered
1 cup (250ml) chicken broth stock, low sodium
250g/8oz cherry tomatoes (whole)
1/2 tsp each salt and pepper
1 tbsp Olive oil
Baking Instructions:
Preheat your oven to 180°C (350°F).
Place the marinated chicken pieces in a baking pan and drizzle with a bit of olive oil. Season each piece on one side with additional salt and pepper to taste.
Pour the chicken broth stock over the marinated chicken and add in your quartered red or brown onions throughout the pan. Submerge them slightly.
Bake the chicken in the preheated oven for 20 minutes uncovered, then scatter your cherry tomatoes throughout the dish, and fresh thyme leaves (if you have them.)
Bake for a further 20-25 minutes, or until the chicken is golden brown and cooked all the way through.
Once done, remove the pan from the oven. Garnish with freshly chopped parsley for a pop of color and flavor.
Serve with my crispy roasted potatoes and side of green beans and enjoy.
