Fish in White Wine Sauce

Fish in White Wine Sauce Recipe
Ingredients:
4 fillets of white fish (firm flesh is best)
1/2 cup white wine
2 tablespoons butter
2 cloves garlic, minced
1 shallot or brown onion, finely chopped
1/4 cup heavy cream
1/2-1 tsp of white wine vinegar
1 tsp of sugar
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
Dry your fish fillets. Season the fillets with salt and pepper on both sides. Coat in plain flour on both sides.
In a large skillet, add oil over medium-high heat. Add the fish fillets and cook for 3-4 minutes on each side, until golden brown. Remove the fish from the skillet and set aside.
In the same skillet, melt another tablespoon of butter. Add the minced garlic and chopped shallot, cooking until softened and fragrant.
Pour in the white wine, and white wine vinegar scraping the bottom of the skillet to deglaze and incorporate all the flavors. Allow the mixture to simmer for 5 minutes to reduce slightly.
Stir in the heavy cream and let the sauce simmer for an additional 2-3 minutes until it thickens. Add in sugar and salt and pepper to taste.
Remove from skillet, pour over the fish in white wine sauce while hot, garnish with chopped parsley. Can be enjoyed with mashy peas and a side of roasted potatoes etc. Enjoy!
