Avocado Banana Cookies
High in healthy fats, avocado is the perfect binder to add to your cookies, meaning you can skip the butter or oil! Super delicious and easy to make, these cookies will be one of your new favourite healthier snacks!

Avocado and Banana Cookies
Ingredients:
2 1/2 cups of spelt or whole meal flour, or mix both
1/2 cup of brown sugar
1/2 cup of white sugar
(If you want to be extra healthy, you can sub the sugar for 1/2 cup of maple syrup or honey - and add more flour if necessary for proper consistency.)
1 cup of chocolate chips or melts (chopped into chunks)
2 tsp of vanilla extract
1 tsp of cinnamon
A sprinkle of salt
1 egg or 1 tbsp of flaxseed meal to 3 tablespoons of water (let rest for 5 minutes before use)
1 avocado, mashed
1 banana, mashed
1/2 cup of nut butter, I used almond, but peanut butter is also great!
Extra chop chips for topping, I added 5 per cookie - optional
Bake at 180 degrees Celsius or 375 degrees fare height for approx 10-14 minutes or until golden.
Instructions:
Add your mashed avocado, banana and egg to a bowl with vanilla extract, and nut butter. Whisk to combine.
Add your sugar to the mix and stir well. Then add your flour with a sprinkle of salt, cinnamon and baking powder. Mix until all combined, then stir in chocolate chunks.
Roll out dough into small balls, flatten and add some extra choc chips on top if desired.
Bake at 180degrees celsius or 375degrees Fahrenheit for approx 10-15 minutes, or until cooked all the way through and golden on edges.
Sprinkle with flaky sea salt after baking.
Dip into a cup of tea and enjoy!
