Best Healthy Yogurt Cake

Ingredients:

  • 4 eggs, separate yolks from whites

  • 70g sugar (or sub for honey or maple syrup to your taste.)

  • 350g Greek yogurt

  • 40g corn starch

  • 1 tsp baking powder

  • Lemon zest

  • 1 tsp vanilla extract

Instructions:

  1. Beat egg whites until stiff peaks form. Set aside.

  2. In a separate bowl, whisk egg yolks with sugar until smooth.

  3. Add baking powder and cornstarch, whisk until combined.

  4. Mix in yogurt, lemon zest, and vanilla extract until smooth.

  5. Gently fold in the stiff egg whites until just combined.

  6. Pour the mixture into a lined tin and bake at 180 degrees Celsius for approximately 40-60 minutes, or until golden and cooked through.

    You can dust it with icing sugar, serve alone or with cream and berries.
