Banana Upside Down Cake
This is my favourite way to use up those aging bananas that have been sitting on our counter for way too long! This Caramel Upside Down Banana cake is seriously SO DELICIOUS. The caramelised banana on top add such a great depth of flavour to this spiced cake. If you haven’t tried it before, you need to give it a go!! Trust me, you won’t regret it.

Ingredients:
For the caramelized bananas;
- 1/4 cup unsalted butter
- 1/3 cup light brown sugar
- 2 large bananas, ripe & sliced up
- 1/4 teaspoon table salt
For the spiced cake;
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon table salt
- 1/2 cup light cooking olive oil
- 1 cup white sugar
- 2 teaspoons pure vanilla extract
- 2 large eggs
- 1 cup of milk
- 1 tsp of cinnamon
Method:
1. Whisk your dried cake ingredients together in a bowl.
2. In a separate bowl, mix your wet cake ingredients - eggs, vanilla essence, milk. Combine wet and dry together and then once mixed completely, stir in oil.
3. To make your caramel, combine your butter and brown sugar over a sauce pan until melted completely and set aside.
4. Pour your caramel mixture over the bottom of your greased and lined baking springform pan.
5. Then slice enough bananas up to layer the entire bottom of pan in the pattern of your choice. Then top with your wet cake mixture.
6. Bake at 180° Celsius or 356° Fahrenheit for approx 40min or until golden brown and cooked all the way through. Let chill in pan for 10 min before flipping and revealing the beautiful cake top.
Serve by itself or with cream or ice cream. I hope you enjoy!
