Carrot Cake and Cookies, two of my favourite things and what better than to combine them and create the best of both worlds? These spiced carrot cake cookies are delicious, and they are packed full of oats and fruit for fibre! They’re so easy, and I think they’ll be a regular on your cookie rotation.
Carrot Cake Oat Cookies Recipe
Ingredients:
1 cup carrot, grated
120g salted butter
1 1/4 cups plain flour
1 cup rolled oats
3/4 cup brown sugar
1/4 cup white sugar
3/4 tsp baking powder
1 tsp baking soda
1/2 - 1 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp nutmeg
1/8 tsp cloves
1 egg, whisked
1 tsp vanilla essence
1/2 cup pecans, chopped
1/2 cup sultanas
Instructions:
Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
In a mixing bowl, cream together the salted butter, brown sugar, and white sugar until smooth.
Add the whisked egg and vanilla essence to the sugar mixture, and mix well.
In a separate bowl, combine the plain flour, rolled oats, baking powder, baking soda, cinnamon, ginger, nutmeg, and cloves.
Gradually incorporate the dry ingredients into the wet ingredients until a dough forms.
Fold in the grated carrot, chopped pecans, and sultanas until evenly distributed in the dough.
Using a cookie scoop or spoon, portion out the dough onto the prepared baking sheet, spacing the cookies apart to allow for spreading.
Bake in the preheated oven for 10-14 minutes or until the edges are golden brown.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
