For when you are craving clotted cream and sweet jam, here is my mumma’s secret #scones recipe. It’s always certain to satisfy your sweet tooth cravings. I’m telling you, these are truly the best scones you will ever eat. Fluffy and oh so delicious. They’re so easy, that you can’t go wrong!
My Mum’s Scones
(Makes 10-14)
2 cups of self raising flour
1/2 tsp of salt
2 tablespoons of icing sugar mixture
1/2 cup of cream
1/2 cup of milk
(A little extra flour and milk for dusting board and glazing scones)
Method:
Preheat your oven to 200°C (400°F).
Sift the 2 cups of self raising flour, salt and icing sugar into a mixing bowl.
Make a well in mixture and pour in all the cream and milk. Mix quickly into a soft dough, then empty out onto a floured board and knead lightly, don’t knead too much we want the scones to be fluffy.
Turn over so the smooth side is on top and roll out to 3 cm thick (don’t roll scones out too thinly, they should be thick).
Cut out with a floured 5 or 6 cm cookie cutter, then re-roll the scraps two or three times to reuse all the mixture.
Arrange the scones close together on the prepared baking tray. Cover with a clean tea towel and leave to rest and rise for 10 minutes.
Before baking, brush the tops of the scones with milk, then bake in the oven for 10-12 minutes or until golden.
Remove from the oven, then wrap immediately in a clean tea towel to steam for 5-10 minutes.
Serve warm with butter or jam and whipped cream. (recipe for the best whipped cream here)
(Note: place scones quite close on tray together to support each other as they rise in the oven, this keeps them moist too.)
