Pecan Pie
Pecan Pie Recipe
This pie would have to be one of my all time favourites. So deliciously sweet and filled with my favourite nuts - pecans! It never fails to satisfy my sweet tooth which I inherited from my father, haha.
Ingredients:
Pastry Crust
1¼ cups plain white flour (all purpose flour)
¼ tsp salt
2 tsp white sugar
115 g / 1 stick salted butter, cold cut into cubes
2.5 - 3 tbsp ice cold water
Filling
1 1/4 cups pecans for filling
1 1/4 cups pecans for topping
3 eggs
1 cup / 200g brown sugar, packed
60 g / 4 tbsp salted butter, melted
3/4 cup / 185 ml light corn syrup
1 tsp vanilla extract
Instructions:
Preheat the oven to 180°C (350°F).
Prepare the Crust:
In a large bowl, mix together the plain flour, salt, and white sugar.
Add the cold, cubed unsalted butter into the bowl.
Using your fingers or a pastry cutter, incorporate the butter into the flour mixture until it resembles coarse crumbs.
Gradually add the ice-cold water, 1 tablespoon at a time, mixing until the dough comes together.
Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Prepare the Filling:
In a separate bowl, whisk together the eggs, brown sugar, melted salted butter, light corn syrup, and vanilla extract until well combined.
Assemble the Pie:
Roll out the chilled pie crust on a floured surface to fit a 9-inch pie dish.
Press the crust into the dish and crimp the edges as desired.
Sprinkle the 1 1/4 cups of pecans onto the bottom of the pie crust.
Pour the filling over the pecans.
Arrange the remaining 1 1/4 cups of pecans on top of the filling in a decorative pattern.
Bake:
Place the pie in the preheated oven and bake for about 50-60 minutes or until the filling is set and the crust is golden brown.
Serve:
Allow the pie to cool before slicing and serving. I like mine on its own, or with a dollop of cream. Enjoy your delicious homemade pecan pie!
