Almond Crescent Biscuits Recipe
These sweet almond biscuits are a classic recipe that go back to nonnas day! They are my Dad’s favourite, so I learnt how to make them for him to enjoy with his morning coffee. Sweet and crunchy on the outside and flakey on the inside, they are truly SO delicious.
Ingredients:
150g blanched almonds
150g (1 cup) plain flour
150g unsalted butter, chilled, cubed
70g sugar
2 egg yolks, at room temperature, lightly whisked
1/2 tsp vanilla essence
Butter, to grease
125g (3/4 cup) icing sugar
60g (1/4 cup) caster sugar
Instructions:
Preheat the oven to 180°C (350°F) and grease a baking tray with butter.
In a food processor, pulse the blanched almonds until finely ground. Add flour, butter, sugar, egg yolks, and vanilla essence. Pulse until the mixture comes together and forms a dough.
Roll tablespoons of the dough into small logs and shape them into crescents. Place them on the prepared baking tray.
Bake the crescent biscuits for 12-15 minutes or until they are lightly golden on the edges. Remove from the oven and let them cool on a wire rack.
Once the biscuits are completely cooled, mix icing sugar and caster sugar in a bowl. Lightly dust the crescent biscuits with the sugar mixture.
Your almond crescent biscuits are ready to be enjoyed with a cup of tea or coffee!
